What makes this coffee special

Mild, nutty, clean

Mild and nutty, with almond and caramel, followed by a fine citrus note. The acidity is soft and well integrated, the body medium. A clean, clear filter coffee without intrusive roast flavors.

The cherries are processed using the washed method: the pulp is removed before drying. This keeps the flavors distinct instead of merging into a fruit compote. In addition, a light roast that does not overpower the coffee is used. That is exactly what makes Sonnental a filter coffee you can still enjoy cold.

Sonnental grows in the mountain rainforest of Villa Rica in the province of Oxapampa, grown by members of the indigenous Yanesha community. The Yanesha are among the oldest indigenous peoples of Peru.

In the cooperative CEPRO Yanesha 141 coffee farmers from seven villages pool their harvests, 43 of them women. Together they achieve volumes and quality standards that individual families could not enforce on the world market. The cooperative is organic and Fairtrade certified and is listed under FLO-ID 34607.

The coffee farms are located at 1,200 to 1,800 meters, in the middle of the UNESCO Oxapampa-Ashaninka-Yanesha biosphere reserve. The reserve protects some of the last largely undisturbed ecosystems of central Peru.

Every cherry is hand-selected and processed using the washed method. This step is the reason for the clarity Sonnental shows in the cup.

Ich finde den Kaffee sehr gut im Geschmack, was mir aufgefallen ist, dass ich die Menge des Kaffeepulvers reduzieren musste, im Verleich zu meiner vorherigen Sorte, um einen für mich guten Geschmack hin zu bekommen. Selbst kalt bleibt der Geschmack erhalten. Der Kaffee ist mild ohne übertriebene Röst-Aromen.

Ist der Sonnental auch für meine Filterkaffeemaschine geeignet, oder ist das eher ein Espresso-Kaffee?

Der Sonnental ist explizit als Filterkaffee geröstet, das ist sein Zuhause. Filterkaffeemaschine, French Press, Handfilter: alles funktioniert. Die mittlere Röstung bei 210 °C über 13–16 Minuten betont nussige und karamellsüße Aromen, ohne Röstbitterkeit. Für die Maschine empfehlen wir 15 g auf 240 ml Wasser und Wasser um 93–94 °C.

Schmeckt der Sonnental bitter, oder ist er wirklich so mild wie beschrieben?

Der Sonnental hat Röstgrad 2 von 5, das ist tatsächlich mild. Die Arabica-Bohnen aus Villa Rica, Peru, bringen nussige und karamellsüße Noten mit einer feinen Zitrusnote. Keine Schokoladen-Schwere, keine Röstbitterkeit. Wer Kaffee bisher oft zu bitter findet, liegt mit diesem Profil richtig.

Sind die Sonnental-Bohnen ölig? Ich hatte schon Probleme mit Mahlwerk-Verkleben.

Der Sonnental ist eine milde Filterröstung, geröstet bei 210 °C für 13–16 Minuten. Das Ergebnis: matte Bohnenoberfläche, kaum Ölaustreten. Stark ölige Bohnen entstehen bei deutlich dunkleren Röstungen. Für Vollautomaten ist genau dieser Röstgrad der sichere Bereich. Du kannst ihn problemlos mahlen, ohne Fettablagerungen im Schacht zu riskieren.

Schmeckt der Sonnental auch im Vollautomaten gut oder ist er nur für Handfilter gedacht?

Wir listen den Sonnental explizit für den Vollautomaten, neben Filterkaffee und Café Crema. 100% Arabica aus Villa Rica, Peru, mild geröstet, mit nussigen und karamell-artigen Aromen. Gerade für Milchgetränke wie Cappuccino funktioniert er gut: Der Körper ist voll genug, um durch Milch zu kommen, die Säure bleibt eingebunden.

Mein Kaffee aus dem Vollautomaten schmeckt oft sauer oder dünn, hilft der Sonnental da?

Saurer, dünner Kaffee aus dem Vollautomaten kommt oft von zu hell gerösteten Bohnen oder falscher Mahlgrad-Einstellung. Der Sonnental hat Röstgrad 2 auf unserer Skala, mild, aber nicht hell-spritzig. Die Säure ist laut SCA-Bewertung (Score 84) gut eingebunden. Stell den Mahlgrad am Automaten einen Schritt feiner, wenn der Kaffee wässrig wirkt.

Der Sonnental ist als Filterkaffee beschrieben, taugt der auch für Cappuccino und Latte Macchiato?

Ja. Wir empfehlen ihn ausdrücklich für Milchkaffeegetränke. Die nussigen Aromen, Mandel, Karamell, tragen sich gut durch Milch. Wer einen kräftigeren, schokoladigen Espresso-Unterton für Latte Macchiato sucht, schaut sich besser in unserem Espresso-Sortiment um. Für einen milden, angenehmen Cappuccino ist der Sonnental aber eine direkte Wahl.

Welche Varietäten stecken im Sonnental und wie wirken die sich auf das Cup-Profil aus?

Im Sonnental werden die Arabica-Varietäten Caturra, Catimor und Catuai angebaut, die typisch für peruanische Höhenlagen sind. Caturra und Catuai bringen ausbalancierte Noten ins Profil; Catimor trägt zu mehr Körper bei. Der SCA-Score von 84 Punkten spiegelt das Zusammenspiel der Sorten wider. Im Geschmack zeigen sich Noten von Orange, Karamell, Mandeln und roten Trauben. Durch die Filterröstung tritt das Terroir deutlich hervor. Ideal für V60 oder AeroPress bleibt der Herkunftscharakter erhalten.

Welche Wasserparameter empfehlt ihr konkret für den V60 mit dem Sonnental?

Wir empfehlen Gesamthärte 4 °dH, Alkalinität 3 °dH. Das ist mineralarm und säurebetont, passt zum milden Säurespiel dieses Kaffees. Brühtemperatur 93–94 °C. Brew Ratio 1:16, also 15 g auf 240 ml. Brühzeit Ziel: 2:45–3:15 Minuten. Wer mit härterem Leitungswasser arbeitet, dämpft die feine Zitrusnote des Profils, Aufbereitung lohnt sich hier.

How fresh is the coffee when it arrives?

We roast in Vöhringen and only fill your bag immediately before shipping. Until then the roast batch is stored sealed in bulk packaging. The roast date is printed on every package. After 10 to 14 days of resting the sweetness and body are just right, after that the coffee remains aromatic for about four months.

Whole bean or ground?

Both. In addition to whole bean we grind on request for portafilter (fine), drip coffee maker, moka pot or French Press (coarse). Freshly ground tastes best, ground coffee loses aroma faster.

What package sizes are available?

250 g and 500 g, most varieties also as 1 kg. The larger the package, the cheaper the price per kilo. We display the price per kilo directly at the size selection.

Is the coffee really organic?

Yes. All our coffees are EU organic certified, Naturgold and Naturharmonie are additionally Demeter certified. The responsible organic control body is shown on each product page in the bean profile, together with the note non-EU agriculture.
