Etna brings together two worlds: Brazilian Arabica from the mountains of Matas de Minas and Indian Canephora from Kerala. The Brazilian component comes from the Dutra family in Minas Gerais—a third-generation family business that has been growing specialty and organic coffees at an altitude of around 1,400 meters since the 1950s. The Canephora component comes from Kerala in southern India, where Robusta ripens at altitudes of 800 meters and above under shade trees—a cultivation method common in India that gives the coffee more depth and less bitterness than typical lowland Robustas. The blend of natural-processed (Brazil) and fully washed (Kerala) beans results in an espresso with a dense crema, full body, and the typical southern Italian chocolate note—without any sharp acidity.
