Die Fiorenzato AllGround Sense eignet sich auch als Ausstellungsstück für Filterkaffee. Durch die präzise Mahlgradeinstellung kannst du das Kaffeepulver optimal auf verschiedene Filtermethoden abstimmen. Die integrierte Dosiergabel hilft dabei, die gewünschte Menge Kaffee einfach und exakt zu dosieren.
Die AllGround Sense ist als Premium-Home-Mühle konzipiert, nicht für High-Volume-Gastronomie. Bei Spitzenlast mit 60+ Bezügen pro Stunde stößt du an Grenzen, das 64-mm-Mahlwerk schafft etwa 4–5 g/s, also rund 18 g Espresso in 4 Sekunden. Das reicht für moderate Cafés oder als Spezialitäten-Zweitmühle. Für echten Gastro-Dauerbetrieb mit hohem Durchsatz empfehle ich dir die Eureka Atlas 85 aus unserem Sortiment: 85-mm-Scheiben, 7–8,5 g/s Mahlleistung, Direktantrieb und auf kontinuierlichen Betrieb ausgelegt. Die kostet zwar mehr, hält aber durch wenn's ballert.
Fiorenzato gibt keine pauschale Wechselintervall-Empfehlung an, das hängt von deinem Durchsatz und der Bohnenqualität ab. Bei circa 10 kg Bohnen pro Woche rechne mit 12–18 Monaten Standzeit der 64-mm-Mahlscheiben. Der Wechsel ist technisch machbar, erfordert aber Werkzeug und etwas Fingerspitzengefühl beim Kalibrieren. Fiorenzato liefert keine Anleitung für Endkunden mit, im Zweifel Service kontaktieren oder bei uns nachfragen, ob wir den Tausch vor Ort anbieten.
Der exakte Totraum ist von Fiorenzato nicht dokumentiert, liegt aber bei On-Demand-Mühlen dieser Bauart typisch bei 5–8 Gramm. Das heißt: Nach Bohnenwechsel musst du diese Menge durchmahlen und verwerfen, bevor die neue Sorte sauber kommt. Für schnellen Sortenwechsel im laufenden Betrieb ist die Sense daher weniger geeignet, wenn du täglich zwischen drei Röstungen springst, schau dir unsere Fiorenzato AllGround ProBrew Single Dose an: Die arbeitet mit Einzeldosierung direkt aus dem Trichter, Totraum quasi null.

Falls du verbindliche Gewährleistung ab Lieferdatum benötigst, empfehlen wir die AllGround Sense Plus GbW als aktuelle Neuware mit 24 Monaten gesetzlicher Gewährleistung und der neuen Display- und Software-Version ab SN 000810260.
Die integrierte Waage der AllGround Sense dosiert automatisch nach Gewicht und stoppt beim voreingestellten Wert. Das Grind-by-Weight-System berücksichtigt Unterschiede in der Schüttdichte beim Wechsel zwischen verschiedenen Röstgraden automatisch. Nachwiegen oder ein manuelles Timer-Update sind nicht nötig. Ab Seriennummer SN 000810260 erkennt die Maschine den Behälter schneller und sorgt so für mehr Reproduzierbarkeit. Der Grenzwert für Einzel- und Doppeldosen liegt jetzt bei 50 g. Dadurch sind auch größere Mengen bei Brew-Varianten möglich. So kannst du dich beim Dial-in immer auf den Mahlgrad und das Rezept verlassen. Dosierschwankungen werden minimiert.
Fiorenzato gibt keine explizite Retention an, aber bei 64-mm-Flachscheiben und Auswurfkanal liegt die typische Retention bei ca. 1–1,5 g. Für Single-Dosing bedeutet das: Du wiegst vorher ab, mahlst, und erhältst etwa 0,5–1 g weniger zurück, bei teuren Geishas merkst du das. Beim Sortenwechsel bleiben Reste im Mahlweg hängen, also entweder kurz purgen oder mit einer Übergangs-Bohne durchspülen. Die AllGround Sense lässt sich werkzeuglos öffnen, das macht Reinigung zwischen verschiedenen Herkünften praktikabel.
