Flavor & Uses
A layered blend: a chocolatey base from Brazil, nougat-like sweetness and a delicate crema from Indian Canephora, bright stone fruit and papaya notes from Ethiopia and Honduras, complemented by the syrupy depth of Indonesian Gayo. The medium roast allows all the components to shine through without burning the fruit or losing the chocolate. Ideal as an espresso, caffè crema, cappuccino, or flat white—in a portafilter, fully automatic machine, moka pot, or as a filter brew.

Gayo refers to the highlands in the North Sumatran province of Aceh. The Protected Geographical Indication “Kopi Arabika Gayo” covers the districts of Aceh Tengah, Bener Meriah, and Gayo Lues. Mandheling is the historical trade name for high-quality coffees from North Sumatra.

From Brazil comes the Dutra family (Legião Fazenda Dutra, Matas de Minas); from Ethiopia, the Goyo lot from the Metad washing station in Guji-Hambella; from Honduras, the Cooperativa Puringla with 76 small-scale producers in the Montecillos mountain range; from Indonesia, Gayo Arabica from the highlands of Aceh; and from India, highland Canephora from Kerala. Three of the five components are certified organic, and all come from long-term sourcing partnerships with transparent supply chains—rather than anonymous industrial-scale products.

Onze Omiroast zijn de alleskunners van ons assortiment – intens van smaak en aromatisch tot in de laatste noot. Om het volledige potentieel van onze bonen te benutten, hebben we hier enkele bereidingsaanbevelingen samengevat.
Portafilter
Maalgraad: Fijn (afhankelijk van de molen)
Recept: Dubbele Shot
- Gebruik 16-20 g versgemalen bonen afhankelijk van het filter.
- Gebruik de DWT-tool (Dosing & Weighing Technique) om de koffiebonen voor het tampen lichtjes los te maken. Dit zorgt voor een gelijkmatige extractie.
- Tamp de koffie gelijkmatig en stevig in de filterdrager.
- Trek een dubbele espresso (ongeveer 25-30 seconden extractietijd).
- Voor onze Omniroast raden we een Brew Ratio van ongeveer 1:5 tot 1:2,5 aan. Dat betekent dat als je bijvoorbeeld 18 gram koffiepoeder gebruikt, je ongeveer 36 tot 45 gram espresso in je kopje moet hebben. Deze verhouding zorgt voor een evenwichtige extractie van de aroma's, waardoor de volle smaak van je hoogwaardige bonen naar voren komt.
- Geniet ervan puur of als basis voor je melkdrank.
Moka pot
Maalgraad: Middelfijn (afhankelijk van de molen)
Recept:
- Vul de onderste ketel met water tot aan het veiligheidsventiel.
- Gebruik 15-18 g gemalen koffie in het filter.
- Zet de kan in elkaar en plaats deze op middelhoog vuur op het fornuis.
- Wanneer de koffie begint te sissen en omhoog komt, haal de kan van het fornuis en laat de koffie kort rusten.

Onze Omni Roasts zijn ook perfect voor iedereen die houdt van het volle, evenwichtige aroma van de bonen en daar een filterkoffie van wil maken. Met deze bereidingsinstructies wordt elke kop een genietmoment!
1. V60 (Pour Over)
Maalgraad: Medium (afhankelijk van de molen)
Recept:
- Gebruik 25 g koffie op 400 ml heet water (ca. 92-95 °C). Perfect met 92°C
- Bevochtig het filter en giet het water weer af.
- Begin met een "Bloom" – giet eerst 50 ml water en wacht 30 seconden.
- Giet vervolgens in cirkelvormige bewegingen langzaam en gelijkmatig de rest van het water op.
AeroPress
Maalgraad: Medium tot fijn (afhankelijk van de molen)
Recept:
- Gebruik 15-18 g koffie en 240 ml heet water (ca. 90-95 °C). Perfect met 92°C
- Giet het water over de koffie en roer kort door, wacht 30 seconden. Giet dan de rest van het water op.
- Plaats de zuiger erop en druk langzaam gedurende 30 seconden tot 1 minuut zodat je op een totale tijd van max 1:30 minuten komt.
