What makes this coffee special

Marzipan, milk chocolate, vanilla

Marzipan on the first sip, then milk chocolate, with vanilla in the finish. Rounded body, soft texture, very little acidity. A single origin from Brazil that has no sharp edges.

Roter Catuai from Matas de Minas, natural processed and sun-dried on patios. The cherry dries around the bean, which gives sweetness and body. Combined with a medium roast that goes far enough to reduce acidity and ends early enough to avoid developing roast bitterness. The result is a coffee without extremes in either direction.

Legião Fazenda Dutra, Matas de Minas

Ednilson and Walter Dutra run Legião Fazenda Dutra in Matas de Minas, in the southeast of Brazil. The farm was founded in 1950 by José Dutra Sobrinho on just over one hectare of land.

Today they cultivate over 300 hectares of specialty and organic coffee. Harvesting takes place between May and September, by hand. The coffee is then dried on patios in the sun, the traditional Brazilian method that gives the coffee its sweetness.

We buy single variety from a single farm. That means: you know who grew your coffee, at what altitude it grew and how it was processed. And the lab values of the delivered batch are shown one section further up, verifiable.

How to get the most out of it

The same bean tastes different with every preparation. Here are the parameters we use to brew it ourselves.

Passt Hornisgrinde in meinen Vollautomaten oder verstopft das Mahlwerk?

Hornisgrinde läuft problemlos durch jeden Vollautomaten. Die Mittelröstung erzeugt trockene bis leicht matte Bohnen ohne Ölfilm, typisch für 210°C über 13-16 Minuten. Das schont das Mahlwerk und verhindert Verklebungen. Die Sorte Roter Catuai ist vom Aufbau her ideal für automatische Mahlwerke. Funktioniert mit Jura, De'Longhi, Gaggia und allen gängigen Modellen.

Welchen Mahlgrad stelle ich am Vollautomaten für Hornisgrinde ein?

Starte mit mittlerer Feinheit, meist Stufe 3–4. Stelle für Espresso etwas feiner ein (Stufe 2–3). Wähle für Caffè Crema etwas gröber (Stufe 4–5). Probiere 17–18 g Kaffeepulver und eine Extraktionszeit von 25–30 Sekunden. Da Hornisgrinde kaum Säure enthält, erkennst du Überextraktion an verstärkter Bitterkeit.

Krieg ich mit Hornisgrinde eine schöne Crema im Vollautomaten hin?

Ja. Roter Catuai aus 1.250-1.400m Höhe bringt natürliche Öle mit, die auch im Vollautomaten eine haselnussbraune, feine Crema erzeugen. Das Natural-Verfahren (sonnengetrocknet) verstärkt die Fülle, das siehst du an der Dichte. Keine Robusta-Mischung nötig. Bei zu dünner Crema: Mahlgrad feiner stellen oder Wassermenge reduzieren. Die Crema hält auch in Milchgetränken.

Ich mag keine sauren Kaffees, ist Hornisgrinde was für mich?

Genau dafür haben wir Hornisgrinde geröstet. Null Säurespitzen, stattdessen klare Süße mit Marzipan und Vanille vorne, Milchschokolade im Abgang. Das kommt von der Mittelröstung bei 210°C und der Natural-Aufbereitung. Läuft im Vollautomaten soft und rund, auch pur ohne Milch. Wenn du bisher nur dunkle Röstungen mochtest: Hornisgrinde zeigt dir, dass Medium auch säurefrei geht.

Schmeckt der Hornisgrinde bitter oder mild?

Der Hornisgrinde ist mild und frei von Säure. Du schmeckst Marzipan, Vanille und Milchschokolade, keine Bitterstoffe. Eine Mittelröstung bei 210 °C erhält die natürliche Süße der Catuai-Bohnen, sodass der Kaffee nicht bitter wird. Als Filterkaffee oder aus der French Press überzeugt er mit einem samtigen Geschmack ohne Ecken und Kanten.

Kann ich den Hornisgrinde in der French Press zubereiten?

Ja, du kannst den Hornisgrinde in der French Press zubereiten. Verwende dazu einen mittelgroben Mahlgrad sowie 25 g Kaffee auf 400 ml heißes Wasser (92–95 °C). Die Mittelröstung und die natürliche Aufbereitung sorgen für Noten von Marzipan und Vanille, der Kaffee bleibt angenehm vollmundig.

Passt der Hornisgrinde zu meiner Kapselmaschine oder Filterkaffeemaschine?

Der Hornisgrinde eignet sich für Filterkaffeemaschinen. Verwende mittleren Mahlgrad und 92–95 °C heißes Wasser. Für Kapselmaschinen ist er ungeeignet, da er nur als ganze Bohne erhältlich ist. Mahle ihn selbst für Filter, French Press oder Mokkakanne.

Ist die Hornisgrinde für Filterkaffee geeignet?

Die Hornisgrinde ist auch für Filterkaffee geeignet. Als sortenreiner Bio-Espresso bietet sie harmonische Aromen von Marzipan, Milchschokolade und Vanille. Durch ihre samtige Textur und den geringen Säuregehalt entsteht ein ausgewogenes Geschmackserlebnis.

How fresh is the coffee when it arrives?

We roast in Vöhringen and only fill your bag immediately before shipping. Until then the roast batch is stored sealed in bulk packaging. The roast date is printed on every package. After 10 to 14 days of resting the sweetness and body are just right, after that the coffee remains aromatic for about four months.

Whole bean or ground?

Both. In addition to whole bean we grind on request for portafilter (fine), drip coffee maker, moka pot or French Press (coarse). Freshly ground tastes best, ground coffee loses aroma faster.

What package sizes are available?

250 g and 500 g, most varieties also as 1 kg. The larger the package, the cheaper the price per kilo. We display the price per kilo directly at the size selection.

Is the coffee really organic?

Yes. All our coffees are EU organic certified, Naturgold and Naturharmonie are additionally Demeter certified. The responsible organic control body is shown on each product page in the bean profile, together with the note non-EU agriculture.
