Wie zuverlässig hält der Thermoblock die Brühtemperatur über mehrere Shots hinweg?

Der Thermoblock mit Kupfer-Thermospirale (über 0,5 m Länge) liefert dank PID-Steuerung stabile Temperaturen, für 2–3 Shots nacheinander ist das solide. Bei höherem Durchsatz zeigt sich aber das typische Thermoblock-Verhalten: Die Temperatur driftet leicht, besonders wenn du zwischen Bezug und Dampf wechselst. Für deinen Barista-Alltag mit 10+ Shots pro Stunde würde ich zur Rubino Plus mit E61-Gruppe und isoliertem Edelstahlkessel greifen, die hält die Temperatur auch unter Dauerlast präzise.

Wie präzise arbeitet das integrierte 43-mm-Mahlwerk für Espresso-Feinabstimmung?

Die 43-mm-Flachmahlscheiben mit Raststufen-Verstellung liefern dir reproduzierbare Mahlgrade, für Einsteiger praktisch, für deine Feinabstimmung aber limitiert. Zwischen zwei Raststufen fehlt dir die Granularität, die du bei Single-Origin-Kaffees brauchst, wenn du das Rezept um 0,2–0,3 Sekunden Shot-Time anpassen willst. Für dein Setup würde ich eine separate Mühle empfehlen, die Pegaso ist stark als All-in-One für Heimbaristas, die Platz sparen wollen, aber nicht für dein Profil-Level.

Wie präzise lässt sich die PID-Temperatur einstellen, kann ich gezielt zwischen 88 °C für helle Kenia und 93 °C für dunklere Blends wechseln?

Die PID-Steuerung zeigt die Temperatur im Display und du kannst sie in einzelnen Grad-Schritten einstellen. Das erlaubt dir, gezielt zwischen 88 °C für helle, säurebetonte Röstungen und 93 °C für dunkle Blends zu wechseln. Die Einstellung bleibt gespeichert, bis du sie änderst. Beachte aber: Der Thermoblock braucht nach jedem Temperaturwechsel kurz Zeit zum Stabilisieren, lass einen Leerbezug laufen, bevor du den Shot ziehst.

Ist die Maschine kompliziert zu bedienen oder kriegt man das als Anfänger hin?

Du kriegst das hin. Die Pegaso hat PID-Steuerung, das heißt, du stellst die Temperatur einmal ein und sie bleibt stabil. Das Display zeigt dir die Brühzeit an, ein Manometer den Druck. Die integrierte Mühle mahlt direkt ins Sieb, du musst nur die Menge einstellen. Aufheizzeit liegt bei 5 bis 7 Minuten. Der Hersteller stuft die Pegaso als Beginner-Modell ein, du hast also Technik an Bord, die dir das Lernen erleichtert.

Was bringt mir die Flow Control konkret beim Kaffee machen?

Mit Flow Control regelst du, wie schnell das Wasser durch den Kaffee läuft. Langsamer Durchfluss am Anfang weicht das Kaffeemehl sanft auf, das nennt sich Preinfusion und verhindert bittere Noten. Du kannst aber auch den Druck während des Bezugs anpassen: mehr Kontrolle über Geschmack und Extraktion. Das macht vor allem bei helleren Röstungen Sinn, die empfindlich auf zu viel Druck reagieren. Für den Einstieg reicht erstmal die Standard-Einstellung.

Brauche ich noch eine separate Mühle oder reicht die eingebaute?

Die eingebaute Mühle mit 43mm-Mahlscheiben reicht für den Start. Sie mahlt frisch für jeden Bezug, du stellst die Menge und den Mahlgrad direkt am Gerät ein. Das ist ein echter Vorteil, weil du nicht zwei Geräte kalibrieren musst. Wenn du später tiefer einsteigen willst und sehr feine Unterschiede schmecken möchtest, kannst du auf eine separate Mühle wechseln, aber für guten Espresso zu Hause bist du erstmal komplett ausgestattet.

Kann ich bei Quick Mill Maschinen den Brühdruck selbst einstellen?

Bei der Pegaso 3035 PID mit Flow Control regelst du den Brühdruck über das integrierte Profilventil. Du steuerst damit den Wasserdurchfluss während der Extraktion, für unterschiedliche Druckprofile je nach Bohne und Rezept. Das Manometer zeigt dir den aktuellen Druck (0–16 bar) an. Andere Modelle ohne Flow Control (z.B. die Pegaso PID ohne FC-Zusatz, Rubino Plus, Luna) haben festen Pumpendruck, dort arbeitest du mit Mahlgrad und Anpressdruck. Die Vibrationspumpe liefert rund 9 bar Brühdruck, der Pumpendruck von 15 bar ist ein Maschinenwert, kein Qualitätsmerkmal.

Wir sind ziemlich begeistert, aber es erfordert etwas Übung.

Besonders, um das Flow Control zu nutzen, muss man sich mit der Zubereitung von Espresso auskennen. Quick Mill hat ein gutes Video zur Handhabe, findet man auf deren Website oder bei YouTube.
Einzig der Milchschäumer gefällt mir nicht oder ich habe den Bogen noch nicht raus. Bekomme zwar schönen Schaum hin, gefällt unseren Gästen prima, aber ich bin mit dem Ergebnis nicht zufrieden. Der Schaum wird fest und feinporig, aber eben leider nicht cremig/sahning, wie er sein sollte und wie ich ihn mit meinem geliebten Handdoppelsieb zubereite, was zugegeben etwas länger dauert…
Trotzdem hat sich die Anschaffung gelohnt. Die Maschine ist der Hingucker, wärmt sich im Nu auf, mahlt, kocht Espresso und schäumt. Hinzukommt, dass sie auch leicht zu reinigen ist.
Kein Profigerät, aber nah dran und vor allem, es geht auch noch schnell!

Schwierig zu reinigen

Die Maschine macht guten Espresso. Aber sie ist schwer zu reinigen. Die Mühle hat eine Klappe, in der immer ein Rest an gemahlenem Kaffee ist. Der bröselt nach. Und beim nächsten Mahlgang wird das alte Espressomehl verwendet. Die Aufhängung die den Siebträger ist so angebracht, dass man die Maschine nur schwer reinigen kann.
