The E61 was introduced in 1961 and has remained the reference point since. A thermosiphon keeps it at temperature continuously, instead of you having to search for it before each shot. You can get seals, shower screens and portafilters for it from specialty dealers, not just the manufacturer.

With Flow Control you manually control how quickly the water runs through the coffee grounds: start slowly, then increase pressure. That takes the edge off acidic beans and gives you an extra adjustment. Without Flow Control the extraction runs at a fixed pressure, and that is enough for most recipes.

The top surface of the machine is warmed by residual heat. A prewarmed cup draws less heat from the espresso, and those last degrees decide whether it still tastes the same in the glass as in the cup.
The machine switches itself off after a set time or goes into a low-power state. That saves electricity when you turn it on in the morning and then forget about it during the day. Without standby it stays on until you switch it off.

Die Mozzafiato Fast V ist in 12 Minuten betriebsbereit (gemessen ab Kaltstart bei Raumtemperatur). Rocket hat die E61-Brühgruppe aktiv beheizt, das bedeutet: Die Gruppe wird zusätzlich zum Thermosiphon direkt mit Heizenergie versorgt. Dadurch stabilisiert sich die Brühtemperatur schneller und du hast weniger Leerlaufverluste. Klassische E61-Gruppen brauchen 20–30 Minuten bis zur thermischen Stabilität, hier bist du fast doppelt so schnell einsatzbereit.
Die Mozzafiato Fast V ist mit einer E61-Brühgruppe und einem 58mm-Siebträger wie die genannten Modelle ausgestattet, arbeitet jedoch laut Herstellerangabe mit einem Wärmetauscher-System (Zweikreiser) und nicht mit einem Dualboiler. Im Vergleich: Die Lelit Bianca bietet Flow-Profiling per Paddle, was für experimentierfreudige Nutzer interessant ist. Die Profitec Pro 600 setzt auf eine Rotationspumpe. Die Rocket besticht durch ihre kompakte Bauweise (28 cm breit, 43 cm tief) sowie die beheizte E61-Brühgruppe. Für Nutzer, die klassische Espresso-Extraktion ohne Flow-Profile bevorzugen, ist die Mozzafiato Fast V eine solide Wahl mit deutlich verkürzter Aufheizzeit von etwa 12 Minuten.
Dualboiler heißt: Ein Kessel nur fürs Brühen, ein zweiter nur für Dampf. Du kannst also gleichzeitig Espresso ziehen und Milch aufschäumen, ohne dass die Temperatur schwankt. Bei Einkreisern musst du zwischen Espresso und Dampf umschalten und warten. Brauchst du es? Wenn du oft Cappuccino oder Latte machst und nicht zwischen jedem Shot warten willst, ja. Für reinen Espresso ohne Milch reicht auch ein Einkreiser.
Die Fast V braucht durchschnittlich 12 Minuten von kalt bis betriebsbereit, abhängig von Wassertemperatur und Raumklima. Für euren Gastrobetrieb heißt das: Maschine spätestens 6:45 Uhr einschalten, dann steht sie pünktlich. Die aktiv beheizte E61-Brühgruppe beschleunigt das Aufheizen im Vergleich zu älteren Rocket-Modellen deutlich. Trotzdem: Wenn ihr die Maschine den ganzen Tag laufen lasst, spielt die Aufheizzeit keine Rolle, die thermische Stabilität bei Serienbezügen ist dann wichtiger.
Die Fast V erreicht Brühtemperatur in durchschnittlich 12 Minuten ab Kaltstart. Das ist für einen Dualboiler mit aktiv beheizter E61-Gruppe deutlich schneller als bei klassischen Thermosiphon-Maschinen, die oft 20–30 Minuten brauchen. Der Trick: Rocket hat die E61 mit direkter Beheizung versehen statt nur auf Thermosiphon-Zirkulation zu setzen. Beachte: Die 12 Minuten gelten bei normaler Wassertemperatur, im Winter aus kaltem Tank kann es 1–2 Minuten länger dauern. Für Morgen-Workflow trotzdem ein echter Vorteil gegenüber der Standard-Mozzafiato.
