What makes this coffee special

Chocolate, nougat, stone fruit

Chocolate base from Brazil, bright stone fruit from Ethiopia, clear fruit and structure from Honduras, syrupy depth from the Indonesian Gayo, plus crema and body from a small Canephora component from Kerala. Low acidity, full body, complex. All five components are EU organic certified.

A cupping score is produced by standardized tasting of a specific coffee, not by averaging supplier scores. For blends we therefore do not provide an overall score. Instead we show the scores of the individual components, as available: Brazil 82, Ethiopia 86, both from BELCO. For the Canephora component the Arabica scoring form would in any case be the wrong metric.

Mount Everest brings together five origins from five countries. From Brazil comes the Dutra family in Matas de Minas, a family farm in its third generation that has been cultivating Roter Catuai at around 1,400 meters using the natural process since the 1950s. From Ethiopia comes the Goyo lot from the Metad washing station in the Hambella district (Guji), washed processed from Heirloom varieties at 2,100 to 2,200 meters. Honduras contributes SHG-EP quality from the Cooperativa Puringla, 76 smallholders from 19 villages in the Montecillos mountain range, Santiago de Puringla, La Paz, in the protected Marcala origin area. Indonesia is represented by Gayo Arabica from the highlands of Aceh, processed semi-washed, i.e. wet-hulled, the typical Sumatra method. The ten percent Canephora share from Kerala (India) grows from 800 meters under shade trees and is fully washed. This combination results in a medium roasted blend with a chocolatey base, nougat-like sweetness and fine fruit accents of stone fruit and papaya.

The same bean tastes different with every preparation. Here are the parameters we use to brew it ourselves.

Läuft Mount Everest problemlos durch meinen Vollautomaten oder verklebt das Mahlwerk?

Mount Everest läuft sauber durch. Die mittlere Röstung erzeugt keine öligen Oberflächen, die Bohne ist leicht matt bis dezent glänzend. Der 10% Canephora-Anteil aus Indien sorgt für stabilen Crema-Druck ohne Fettfilm. Bei uns läuft die Mischung seit Monaten in Jura, De'Longhi und Siemens ohne Verklebung. Mahlgrad auf fein bis mittelfein stellen, dann hast du dichte haselnussbraune Crema und vollen Körper in der Tasse.

Wie sauer ist der Mount Everest im Vollautomaten, mein Magen verträgt keine Säurebomben?

Mount Everest ist eine mittlere Röstung mit mild eingebundener Säure. Im Vordergrund stehen schokoladige Noten aus brasilianischen Bohnen. Dezente Fruchtnuancen aus Äthiopien und Honduras ergänzen das Aroma. Die Säure bleibt auch im Vollautomaten zurückhaltend. Wenn du besonders säurearme Kaffees bevorzugst, empfiehlt sich unsere Sorte Bergkraft als Alternative.

Was unterscheidet Mount Everest von eurem Bergkraft, beide sind doch für Vollautomaten?

Mount Everest ist unser Blend aus fünf Ländern mit 90 % Arabica und 10 % Canephora. Er schmeckt intensiv, komplex und bietet Noten von Schokolade, Nougat, Steinfrucht und Papaya. Bergkraft stammt aus zwei Kooperativen. Er ist milder und ausgewogen. Beide sind für Vollautomaten geeignet. Bevorzugen Sie kräftige, vielschichtige Tassen, empfehlen wir Mount Everest. Für harmonische, sanfte Tassen ist Bergkraft die bessere Wahl.

Welche Einstellung am Vollautomaten bringt die beste Crema bei Mount Everest?

Stelle den Mahlgrad auf fein bis mittelfein ein. Wähle eine mittlere bis hohe Brühtemperatur. Für Espresso sind 35 bis 40 ml Wasser optimal. Der Canephora-Anteil unterstützt eine gute Crema. Ist der Mahlgrad zu grob, verschwindet die Crema schnell. Stelle die Intensität auf mittel oder hoch. Dank der mittleren Röstung lässt sich Mount Everest fein mahlen, ohne dass er schnell bitter wird. Reinige die Brühgruppe alle zwei Wochen. So bleibt die Crema stabil.

Wie schmeckt der Mount Everest, ist der sehr bitter oder eher mild?

Mount Everest ist ein mittel gerösteter Blend mit wenig Säure und ohne aufdringliche Bitterkeit. Du schmeckst Schokolade und Nougat als Basis, dazu feine Steinfrucht- und Papaya-Noten. Der Körper ist voll und ausgewogen, weder zu leicht noch zu wuchtig. Perfekt, wenn du einen aromatischen Kaffee ohne scharfe Ecken suchst. Funktioniert als Espresso, Cappuccino oder in der French Press gleichermaßen gut.

Kann ich den Mount Everest auch in meiner French Press oder Filterkaffeemaschine zubereiten?

Ja, du kannst Mount Everest in der French Press und in der Filterkaffeemaschine zubereiten. Verwende für die French Press einen mittleren Mahlgrad und eine Ziehzeit von vier Minuten. Für die Filterkaffeemaschine empfehlen wir 25 g Kaffee auf 400 ml Wasser bei 92 °C.

How fresh is the coffee when it arrives?

We roast in Vöhringen and only fill your bag immediately before shipping. Until then the roast batch is stored sealed in bulk packaging. The roast date is printed on every package. After 10 to 14 days of resting the sweetness and body are just right, after that the coffee remains aromatic for about four months.

Whole bean or ground?

Both. In addition to whole bean we grind on request for portafilter (fine), drip coffee maker, moka pot or French Press (coarse). Freshly ground tastes best, ground coffee loses aroma faster.

What package sizes are available?

250 g and 500 g, most varieties also as 1 kg. The larger the package, the cheaper the price per kilo. We display the price per kilo directly at the size selection.

Is the coffee really organic?

Yes. All our coffees are EU organic certified, Naturgold and Naturharmonie are additionally Demeter certified. The responsible organic control body is shown on each product page in the bean profile, together with the note non-EU agriculture.
