What makes this coffee special

Mild, nutty, clean

Mild and nutty on the attack, with almond and caramel, followed by a fine citrus note. The body is medium and soft, the acidity clearly perceptible without dominating the nutty profile. An everyday espresso that also holds up in cappuccino and latte.

Milk smooths the acidity and lifts almond and caramel. The cappuccino becomes nutty-sweet rather than chocolatey, with the citrus note as a fresh counterpoint. Many light espressos disappear in large milk drinks, Andenperle does not, because the caramel sweetness of the espresso roast carries through.

Andenperle grows in the mountain rainforest of Villa Rica in the province of Oxapampa, cultivated by members of the indigenous Yanesha community. The Yanesha are among the oldest indigenous peoples of Peru.

In the cooperative CEPRO Yanesha, 141 coffee farmers from seven villages, 43 of them women, pool their harvest. Together they achieve volumes and quality standards that individual families could not enforce on the world market. The cooperative is organic and Fairtrade certified and registered under FLO-ID 34607.

The coffee gardens are at 1,200 to 1,800 meters, right in the middle of the UNESCO Oxapampa-Ashaninka-Yanesha biosphere reserve. The reserve protects some of the last largely undisturbed ecosystems of central Peru.

Every cherry is hand selected and processed by washing. This step is the reason for the clarity that sets Andenperle apart from heavier espressos.

Sind die Andenperle-Bohnen ölig? Ich hatte schon Probleme mit verklebtem Mahlwerk.

Die Andenperle hat eine mittlere Röstung, geröstet bei 210 °C für 13–16 Minuten. Das ergibt eine trockene, matte Oberfläche. Stark ölige Bohnen entstehen meist bei sehr dunklen Röstungen. Hier bist du auf der sicheren Seite: 100% Arabica, mittlerer Röstgrad, vollautomatentauglich.

Funktioniert die Andenperle auch für Cappuccino aus dem Vollautomaten oder ist sie zu mild?

Für Cappuccino und Latte Macchiato ist sie ausdrücklich empfohlen. Die nussigen Noten mit feiner Karamell-Süße tragen gut durch Milch. Der Körper ist vollmundig genug, dass der Espresso nicht verschwindet, auch wenn dein Vollautomat einen eher kurzen Brühzyklus fährt.

Mein Kaffee aus dem Vollautomaten schmeckt sauer, macht das mit der Andenperle besser?

Saurer Kaffee kommt oft von zu heller Röstung oder falsch eingestelltem Mahlgrad. Die Andenperle hat eine mittlere Säure und Röstgrad 3 von 5. Das ist deutlich ausgewogener als helle Filterröstungen. Stell deinen Vollautomaten auf mittleren oder leicht feinen Mahlgrad, das gibt mehr Süße, weniger Schärfe.

Für welche Kaffeemaschine eignet sich die Andenperle am besten?

Die Andenperle eignet sich am besten für die Zubereitung in der Siebträgermaschine. Durch ihren mittleren Röstgrad entfaltet sie dort ihr volles Aroma und eine ausgewogene Crema. Die empfohlene Temperatur liegt bei 93–94 °C, die Brühzeit bei 27–30 Sekunden.

Warum ist die Andenperle milder als andere Espressi?

Die Andenperle wird aus peruanischen Arabica-Bohnen hergestellt, die auf rund 1.600 Metern Höhe wachsen. Diese Bohnen rösten wir bei etwa 210 °C für 13 bis 16 Minuten. Arabica enthält weniger Bitterstoffe als Robusta und schmeckt milder. Durch die langsame Röstung bleiben viele natürliche Aromen erhalten. Die gewaschene Aufbereitung bringt klare, fruchtige Noten hervor. Andenperle eignet sich auch gut für Cappuccino und Latte.

Welche Varietäten stecken in der Andenperle und wie prägen sie das Profil?

Die Andenperle besteht aus Caturra, Catimor und Catuai, allesamt Arabica-Kreuzungen, die in peruanischen Höhenlagen stabil und ertragreich wachsen. Caturra bringt Helligkeit, Catuai Körper. Catimor ist eine Robusta-nahe Hybride, die Struktur und Bitternote-Resistenz liefert. Das Ergebnis auf 1.600 m in Villa Rica: nussige Basis mit feiner Mandel-Karamell-Note und milder Citrus-Säure. Kein Bourbon, kein Typica, das Profil ist rund und stabil, nicht komplex-floral.

Taugt die Andenperle auch als Omniroast für Filter oder ist das wirklich Espresso-only?

Die Andenperle ist als Espresso entwickelt, mittlere Röstung, Brew Ratio 1:2 bis 1:2,5, 93–94 °C. Für V60 oder AeroPress funktioniert sie technisch (wir geben Rezepte dafür), aber das Profil ist auf Espresso optimiert. Wer ein saubereres Filter-Profil mit mehr Helligkeit sucht, braucht eine hellere Röstung derselben Herkunft. Die Andenperle bleibt im Filter rund und nussig, floral oder bright wird sie nicht.

Welche Brew Ratio und Extraktionszeit empfehlt ihr für die Andenperle am Siebträger?

Wir fahren die Andenperle mit 16–20 g Einwaage, Brew Ratio 1:2 bis 1:2,5 und 27–30 Sekunden Extraktionszeit bei 93–94 °C. Das ergibt bei 18 g Input rund 36–45 g im Cup. Bei mittlerer Röstung und Fully-Washed-Processing bleibt die Säure kontrolliert, die nussigen Noten kommen bei kürzerer Ratio klarer durch.

How fresh is the coffee when it arrives?

We roast in Vöhringen and only fill your bag immediately before shipping. Until then the roast batch is stored sealed in bulk packaging. The roast date is printed on every package. After 10 to 14 days of resting the sweetness and body are just right, after that the coffee remains aromatic for about four months.

Whole bean or ground?

Both. In addition to whole bean we grind on request for portafilter (fine), drip coffee maker, moka pot or French Press (coarse). Freshly ground tastes best, ground coffee loses aroma faster.

What package sizes are available?

250 g and 500 g, most varieties also as 1 kg. The larger the package, the cheaper the price per kilo. We display the price per kilo directly at the size selection.

Is the coffee really organic?

Yes. All our coffees are EU organic certified, Naturgold and Naturharmonie are additionally Demeter certified. The responsible organic control body is shown on each product page in the bean profile, together with the note non-EU agriculture.
