Fazenda Camocim, Espírito Santo

Fazenda Camocim is located in the hills of Espírito Santo in Brazil and is considered a pioneering operation for biodynamic coffee. It is one of the few Demeter-certified coffee farms worldwide.

Camocim is both a timber and coffee farm. The coffee grows in an agroforestry system, embedded in the Atlantic rainforest and shaded by trees. Besides coffee cultivation, the operation includes animal husbandry, its own water treatment and the promotion of biodiversity. Closed nutrient cycles and on-site composts replace purchased fertilizers.

The biodynamic approach according to Demeter guidelines goes beyond the requirements of organic agriculture. Individual competition lots of the farm have been rated with over 90 points in international evaluations.

Kann ich die Naturharmonie in meinem Vollautomaten verwenden?

Die Naturharmonie ist eine Filterröstung mit mittlerem Röstgrad, für klassischen Filterkaffee oder French Press optimiert. In deinem Vollautomaten fehlt die nötige Rösttiefe für guten Espresso oder Cafe Crema: Die Bohne ist zu hell geröstet, um unter Druck das volle Aroma zu entfalten. Für deinen Vollautomaten empfehlen wir den Demeter Espresso Naturgold, ebenfalls von der Camocim Farm, aber mittelkräftig bis kräftig geröstet und damit perfekt für Vollautomaten abgestimmt.

Ist die Naturharmonie säurearm für meinen Vollautomaten?

Die Naturharmonie hat eine angenehm niedrige Säure (SCA-Score 85, mittlerer Röstgrad), ist jedoch keine Espressoröstung. Für Vollautomaten fehlt ihr die nötige Rösttiefe, Filter-Bohnen schmecken dort oft zu dünn und leicht sauer. Wenn du säurearmen Kaffee aus dem Vollautomaten wünschst, empfehlen wir unseren Demeter Espresso Naturgold: ebenfalls nussig und mild, aber kräftiger geröstet und perfekt für Vollautomaten geeignet.

Kann ich mit der Naturharmonie einen Cafe Crema aus dem Vollautomaten machen?

Nein, die Naturharmonie ist eine Filterröstung, für Handfilter oder French Press gemacht, nicht für Druck-Extraktion. Im Vollautomaten wird der Kaffee wässrig und unterextrahiert, weil die Röstung zu hell ist. Für Cafe Crema aus deinem Vollautomaten brauchst du eine Espressoröstung. Unser Demeter Espresso Naturgold liefert dir nussige, weiche Aromen und funktioniert perfekt im Vollautomaten, auch für längere Cafe-Crema-Tassen.

Funktioniert der Naturharmonie auch in meinem Vollautomaten oder ist der nur für Filter?

Der Naturharmonie wurde als Filterkaffee geröstet. Du kannst ihn aber auch im Vollautomaten zubereiten, zum Beispiel als Café Crema mit größerer Tassengröße (120–180 ml). Für klassischen Espresso empfehlen wir unseren dunkler gerösteten Naturgold Espresso von derselben Camocim-Farm. Beide Sorten sind 100% Arabica und Demeter-zertifiziert und unterscheiden sich nur im Röstgrad.

Auf welchen Mahlgrad stelle ich meinen Vollautomaten für den Naturharmonie ein?

Für den Naturharmonie empfehlen wir einen mittleren Mahlgrad. Das Mahlwerk Ihres Vollautomaten sollte nicht zu fein und nicht zu grob eingestellt sein. So kann der Kaffee sein volles Aroma entfalten. Je nach Geschmack können Sie den Mahlgrad individuell anpassen.

Was unterscheidet die Demeter-Bohnen Naturgold und Naturharmonie voneinander?

Beide Bohnen stammen von der Fazenda Camocim in Brasilien und sind Demeter-zertifiziert. Der Hauptunterschied liegt in der Röstung: Naturgold ist unser Espresso mit mittelkräftiger bis kräftiger Röstung, vollmundig, nussig und für Siebträger oder Vollautomat. Naturharmonie ist als Filterkaffee konzipiert, milder geröstet und mit weicherer, sanfterer Süße. Wenn du Espresso, Cappuccino oder Latte Macchiato trinkst, passt Naturgold perfekt. Für Filterzubereitung (V60, AeroPress, French Press) nimm Naturharmonie, die milde Röstung entfaltet sich da besser. Beide nutzen Natural-Aufbereitung und erreichen einen SCA-Score von 84-85.

Welches Aufbereitungsverfahren steckt hinter der Naturharmonie, Natural oder Washed?

Die Naturharmonie wird als Pulped Natural aufbereitet. Das bedeutet: Die Fruchtschale wird maschinell entfernt, aber ein Teil des Fruchtfleisches bleibt während der Trocknung an der Bohne. Ergebnis ist ein Profil, das zwischen Natural und Washed liegt, vollmundiger Körper, klare Nuss- und Karamellnoten, sehr milde Säure. Typisch für gut gemachte brasilianische Pulped Naturals von höheren Lagen.

SCA-Score 85 oder 83, was ist der belegte Wert für die Naturharmonie?

Der belegte SCA-Score liegt bei 85. Das bewegt sich solide im Specialty-Segment, ausreichend, um die beschriebenen Noten von Nuss, Karamell und zarter Schokolade erwartbar zu machen. Die Fazenda Camocim hat mit einzelnen Microlots sogar über 90 Punkte bei Cup-of-Excellence-Auktionen erreicht, allerdings bei anderen Lots, die Naturharmonie ist die Filterröstung der Farm, kein prämiertes Microlot.

How fresh is the coffee when it arrives?

We roast in Vöhringen and only fill your bag immediately before shipping. Until then the roast batch is stored sealed in bulk packaging. The roast date is printed on every package. After 10 to 14 days of resting the sweetness and body are just right, after that the coffee remains aromatic for about four months.

Whole bean or ground?

Both. In addition to whole bean we grind on request for portafilter (fine), drip coffee maker, moka pot or French Press (coarse). Freshly ground tastes best, ground coffee loses aroma faster.

What package sizes are available?

250 g and 500 g, most varieties also as 1 kg. The larger the package, the cheaper the price per kilo. We display the price per kilo directly at the size selection.

Is the coffee really organic?

Yes. All our coffees are EU organic certified, Naturgold and Naturharmonie are additionally Demeter certified. The responsible organic control body is shown on each product page in the bean profile, together with the note non-EU agriculture.
