Wie verhält sich die PL72 bei feinsten Espresso-Mahlgraden, schaffen die flachen 64mm-Scheiben bei 1.390 U/min wirklich homogene Partikelverteilung ohne Hitzeeintrag?

Die 64mm-Scheiben aus gehärtetem Stahl mahlen bei 1.390 U/min langsam genug für feine Partikelverteilung ohne nennenswerten Hitzeeintrag. Die stufenlose, mikrometrische Verstellung gibt dir präzise Kontrolle für Single-Origin-Espressi. Was du bei diesem Scheibendurchmesser allerdings merken wirst: Bei helleren Röstungen auf Ristretto-Mahlgrad musst du mehr Zeit einplanen als bei einer 98mm-Mühle. Für klassische mittel- bis dunklere Espresso-Röstungen liefert die William konstante Ergebnisse, bei hellsten Filter-Röstungen würde ich dir eher zur Eureka Mignon Specialita oder einer Niche Zero raten.

Wie stabil hält die Mara X die Brühtemperatur über mehrere Bezüge hinweg?

Das Dual-Probe-System mit Thermosyphon-Zirkulation macht die Mara X in der Temperaturstabilität deutlich besser als klassische HX-Maschinen. Ein Sensor sitzt im 1,8l-Dampfboiler, der zweite direkt im Wärmetauscher, dadurch fällt das klassische Temperatursurfen praktisch weg. Die drei Modi (Warm/Hot/Extra Hot) sind fest vordefiniert, keine stufenlose PID-Regelung wie bei der Bianca. Du musst also nicht vor jedem Shot flushen, aber feinjustieren für unterschiedliche Röstgrade geht nur über die drei Stufen. Im Xmode coffee stabilisiert sich die Gruppe schnell auf konstante Extraktionstemperatur, reproduzierbare Bezüge ohne manuelle Temperatur-Akrobatik.

Wie präzise ist die Druckprofilierung der Bianca über das Paddle wirklich, merke ich im Shot einen Unterschied zwischen 6 und 9 bar Startdruck?

Das Paddle der Bianca gibt dir echte Kontrolle über den Druckaufbau. Du spürst den Unterschied direkt: Bei 6 bar Startdruck extrahierst du sanfter, reduzierst Channeling und holst mehr Süße aus hellen Röstungen. Bei 9 bar ab Sekunde eins betonst du Body und Crema, ideal für klassische italienische Profile. Das L58E-Gruppenmanometer zeigt dir den tatsächlichen Brühdruck in Echtzeit, nicht den Pumpendruck. So kannst du während des Bezugs nachjustieren und reproduzierbare Druckkurven fahren. Die Low-Flow-Funktion im LCC ergänzt das: Du startest mit reduziertem Durchfluss, lässt den Puck gleichmäßig vorsättigen und steuerst dann über das Paddle die Rampe hoch. Das ist kein Marketing-Feature, du schmeckst es im Cup.

Does the height-adjustable Hands-Free holder also fit 58mm portafilters with a shorter shaft, e.g. from the Lelit Bianca?

The stainless steel holder is height-adjustable and accommodates all common 58mm portafilters, including those with a shorter shaft like the Bianca or Elizabeth. The hands-free system securely clamps the portafilter, allowing you to adjust the dosage while grinding or use the WDT rake. The wide catch tray minimizes coffee grounds scattering around the portafilter. For shorter portafilters, simply lower the holder; the adjustment is tool-free.

Low-flow function vs. mechanical pre-infusion via the E61 – what does the software-controlled variant actually bring me?

The mechanical pre-infusion of the Faema E61 operates passively via spring pressure – about 3 bar for 5–8 seconds, not adjustable. The low-flow function via the LCC display gives you more control: you set the start time and duration, reduce the flow to under 2 ml/s, and slowly saturate the puck. This reduces channeling with fine grind or uneven tamping and gives you more influence over the result. With the paddle, the pressure ramp can be individually extended. This combination provides noticeably clearer extraction and more sweetness in the cup with complex roasts. Without the paddle, the electronic pre-infusion remains the only controllable option.

Faema E61 on the Mara X, how does the L58E group differ specifically?

The Mara X uses the E61 brew group. Your portafilter size is 58 mm. The pre-infusion is programmable on the Mara X, not just mechanical. Only the Bianca with paddle system offers manual pressure profile control. For classic espresso extraction without manual pressure profile, I recommend the Mara X.

Vibrationspumpe bei 1400 Watt, reicht das für stabilen Druck bei hellen Röstungen?

Die Vibrationspumpe liefert konstanten Druck für Espresso-Extraktion, auch bei hellen Röstungen mit feinerem Mahlgrad. 1400 Watt sind für den Heimgebrauch und mittlere Bezugsfrequenz ausreichend, das System arbeitet thermisch stabil, solange du nicht dauerhaft 40+ Shots am Tag ziehst. Bei sehr feinen Mahlgraden und hohem Widerstand kann eine Vibrationspumpe minimal lauter werden, aber der Druck bleibt im grünen Bereich (Manometer zeigt's dir). Für echten Dauerbetrieb oder wenn du komplett geräuschlos arbeiten willst, wäre eine Rotationspumpe wie in der Bianca die bessere Wahl, dort hast du auch die Möglichkeit zur Druckprofilierung.

Vibrationspumpe mit 1400W, limitiert mich das beim Druckprofiling gegenüber Rotationspumpen, oder ist die Regelung präzise genug?

Die Vibrationspumpe ist über die externe Justierschraube kalibrierbar und liefert stabilen Druck für Druckprofile bis 9 bar. Das Paddle gibt dir die gleiche Präzision wie bei einer Rotationspumpe, du regelst mechanisch über den Durchfluss, nicht über die Pumpe selbst. Der Unterschied liegt woanders: Vibrationspumpen sind lauter und reagieren minimal träger bei schnellen Druckwechseln. Für Flat-Profile oder sanfte Ramp-ups merkst du keinen Unterschied. Erst bei sehr schnellen Up-Down-Profilen (z.B. Blooming-Shots mit abrupten Drucksprüngen) wäre eine Rotationspumpe direkter. Für klassische Declining- oder Flat-Profile und tägliche Espresso-Extraktion reicht die Vibrationspumpe absolut, das Paddle kompensiert jede Trägheit.

Wie stabil hält die Bianca die Brühtemperatur bei hellen Filter-ähnlichen Röstungen?

Die Bianca nutzt zwei getrennte Edelstahl-Boiler mit jeweils eigener PID-Regelung – 800 ml für Kaffee, 1,5 Liter für Dampf. Das duale Setup verhindert thermische Einflüsse zwischen Bezug und Dampf. Du stellst die Brühtemperatur direkt am LCC-Display ein, die PID hält sie während der Extraktion konstant. Bei mehreren Shots nacheinander bleibt die Temperatur reproduzierbar, weil der dedizierte Kaffee-Boiler nicht vom Dampfsystem gestört wird. Für sensible Äthiopier oder kenianische Varietäten mit engem Temperaturfenster ist das entscheidend, der Shot schmeckt beim dritten Bezug wie beim ersten.
