Was diesen Kaffee besonders macht

Marzipan im Antrunk, dahinter Milchschokolade, im Nachklang Vanille. Runder Körper, weiche Textur, sehr wenig Säure. Ein Single Origin aus Brasilien, der ohne Ecken auskommt.

Die genannten Aromen sind natürliche Geschmacksassoziationen aus Rohkaffee und Röstung. Dem Kaffee wird nichts zugesetzt.

Warum dieser Kaffee so mild ist

Roter Catuai aus Matas de Minas, natural aufbereitet und auf Patios sonnengetrocknet. Die Kirsche trocknet dabei um die Bohne herum, das gibt Süße und Körper. Dazu eine mittlere Röstung, die weit genug geht, um die Säure abzubauen, und früh genug endet, um keine Röstbitterkeit aufzubauen. Das Ergebnis ist ein Kaffee ohne Spitzen in beide Richtungen.

Dieselbe Bohne, drei Produkte

Der Roter Catuai der Fazenda Dutra steckt auch in Ätna und in Mount Everest. Hornisgrinde ist die reine Form: nur diese eine Bohne, medium geröstet. Ätna nimmt dieselbe Bohne, röstet sie dunkel und ergänzt ein Drittel Canephora. Mount Everest verwendet sie als Basis für einen Blend aus fünf Herkünften.

Die Menschen hinter dem Kaffee

Ednilson und Walter Dutra führen die Legião Fazenda Dutra in Matas de Minas, im Südosten Brasiliens. Gegründet wurde der Betrieb 1950 von José Dutra Sobrinho auf etwas mehr als einem Hektar Land.

Heute bewirtschaften sie über 300 Hektar Spezialitäten- und Bio-Kaffee. Geerntet wird zwischen Mai und September, von Hand. Getrocknet wird anschließend auf Patios in der Sonne, dem traditionellen brasilianischen Verfahren, das dem Kaffee seine Süße gibt.

Wir kaufen sortenrein von einem einzigen Betrieb. Das heißt: Du weißt, wer deinen Kaffee angebaut hat, auf welcher Höhe er gewachsen ist und wie er aufbereitet wurde. Und die Laborwerte der gelieferten Charge stehen eine Sektion weiter oben, nachprüfbar.

Herkunft und Transparenz

Brasilien, Matas de Minas, Legião Fazenda Dutra. Ein Familienbetrieb in dritter Generation. Gegründet in den 1950er Jahren von José Dutra Sobrinho auf etwas mehr als einem Hektar, heute über 300 Hektar, geführt von seinen Söhnen Ednilson und Walter Dutra.

Rohkaffee-Eingangsanalyse (BELCO): Dichte 697 g/L, Restfeuchte 11,1 %, Wasseraktivität 0,59 aw, Siebgröße 16+, 0 Primärdefekte, 8 Sekundärdefekte, BELCO-Score 82. Diese Werte beziehen sich auf den Rohkaffee der genannten Charge.

Röstdatum und Genussfenster: Das Röstdatum steht auf jeder Packung. Nach 10 bis 14 Tagen Ruhezeit sind Süße und Körper auf dem Punkt, danach bleibt der Kaffee rund vier Monate aromatisch. Bis zur Bestellung lagert die Röstcharge verschlossen im Großgebinde, deine Tüte wird erst unmittelbar vor dem Versand abgefüllt.

Roasting

Our coffee beans are gently roasted at 210 °C for about 13–16 minutes, resulting in a medium roast that perfectly brings out the fine aromas. Unlike large roasteries that produce darker beans at higher temperatures and shorter times, our method preserves a balanced, delicate flavor that you can taste immediately.

Auch hier ein Stern Abzug, da ich besonders auf wirklich frisch geröstete Bohnen wert lege (max 1-2 Wochen vor Lieferung), auch hier schon mit entsprechendem Kommentar bei der Bestellung mehrfach perfekt funktioniert hat.

The perfect extraction

Preparation recommendation

Our Omiroast are the ultimate all-rounders in our range - intense in taste and aromatic right down to the last note. So that you can exploit the full potential of our beans, we have put together a few preparation recommendations here.

Portafilter

Grinding level: Fine (depending on the grinder)

Recipe: Double Shot

  1. Use 16-20 g of freshly ground beans depending on the sieve.
  2. Use the DWT tool (Dosing & Weighing Technique) to slightly loosen the coffee beans before tamping. This ensures an even extraction.
  3. Tamp the coffee evenly and firmly into the portafilter.
  4. Make a double espresso (approx. 25-30 seconds extraction time).
  5. For our Omniroast, we recommend a brew ratio of around 1:5 to 1:2.5. This means that if you use 18 grams of ground coffee, for example, you should have around 36 to 45 grams of espresso in your cup. This ratio ensures a balanced extraction of the aromas, bringing out the full flavor of your high-quality beans.
  6. Enjoy it pure or as a base for your milk drink.
Moka pot

Grinding level: medium-fine (depending on the grinder)

Recipe:

  1. Fill the lower boiler with water up to the safety valve.
  2. Use 15-18 g of ground coffee in the sieve.
  3. Assemble the pot and place it on the stove over medium heat.
  4. When the coffee starts to fizz and rise, remove the pot from the stove and let the coffee rest for a moment.

1. V60 (Pour Over)

Grinding level: Medium (depending on the grinder)

Recipe:

  1. Use 25 g of coffee to 400 ml of hot water (approx. 92-95 °C). Perfect with 92°C
  2. Wet the filter and pour the water out.
  3. Start with a “bloom” – first pour 50 ml of water and wait 30 seconds.
  4. Then pour in the remaining water slowly and evenly in circular movements.
AeroPress

Grinding level: medium to fine (depending on the grinder)

Recipe:

  1. Use 15-18 g of coffee and 240 ml of hot water (approx. 90-95 °C). Perfect with 92°C
  2. Pour the water over the coffee and stir briefly. Wait 30 seconds. Then pour in the first of the water.
  3. Put the plunger on and press slowly for 30 seconds to 1 minute so that you reach a total time of max 1:30 minutes.
