1. grind is the be-all and end-all - or: why your beans shouldn't be ground at will

Imagine you're building a sandcastle. Sand too coarse? The water runs through like in a bad relationship. Sand that's too fine? The thing collapses like a failed cake. It's the same with coffee! The right grind determines whether your espresso tastes like bitter agony or a velvety revelation.
