honey sweet, mild, round

On the palate forest honey and dried fig at first, followed by milk chocolate, with caramel and malt in the finish. A balanced, soft profile with noticeable sweetness and mild acidity.

Decaffeination is an additional processing step between harvest and roasting, with its own logistics and its own weight loss. We could have offered Nachtgold cheaper with a solvent-based process. We did not want that. The price difference to our other coffees is exactly this decision.

Cooperative Siembra Abundante (585 smallholder farmers, Tzeltal)

The cooperative Siembra Abundante was founded in 2019 in Yajalón, Chiapas and brings together 585 smallholders – 310 men and 275 women – mainly from the indigenous Tzeltal community. They specialize in high-quality organic coffee and focus on sustainability by preserving natural resources and completely refraining from agrochemicals. The volcanic soils of the Sierra Madre and the unique microclimate between the Atlantic and the Pacific create ideal conditions for complex, balanced coffees.

How much caffeine is still in it?

Decaffeinated roasted coffee may contain at most 0,1 % caffeine in the dry mass in Germany. Nachtgold is marketed as decaffeinated roasted coffee and complies with this requirement. It is therefore not completely caffeine-free. No decaffeinated coffee is, technically it is not possible. If you must completely avoid caffeine for compelling reasons, coffee is fundamentally not the right beverage for you.

How is Nachtgold decaffeinated?

Nachtgold is decaffeinated using a water-based process, without conventional chemical solvents such as dichloromethane or ethyl acetate. Simplified it goes like this: the green coffee is steamed and swells. It is then transferred to a water bath in which the caffeine moves from the bean into the liquid. The caffeine is removed from the water through a filter, while the flavor compounds remain in the water and migrate back into the bean with the next batch. After that, the coffee is gently redried over several hours. Water-based processes are considered in the specialty scene to be the gentlest methods, because the aroma compounds are largely preserved.

How fresh is the coffee when it arrives?

We roast in Vöhringen and only fill your bag immediately before shipping. Until then the roast batch is stored sealed in bulk packaging. The roast date is printed on every package. After 10 to 14 days of resting the sweetness and body are just right, after that the coffee remains aromatic for about four months.

Whole bean or ground?

Both. In addition to whole bean we grind on request for portafilter (fine), drip coffee maker, moka pot or French Press (coarse). Freshly ground tastes best, ground coffee loses aroma faster.

What package sizes are available?

250 g and 500 g, most varieties also as 1 kg. The larger the package, the cheaper the price per kilo. We display the price per kilo directly at the size selection.

Is the coffee really organic?

Yes. All our coffees are EU organic certified, Naturgold and Naturharmonie are additionally Demeter certified. The responsible organic control body is shown on each product page in the bean profile, together with the note non-EU agriculture.

Can I get the coffee on a subscription?

Yes. With a subscription you save 10 % compared to a single order. You set delivery frequency and quantity directly at purchase.
