Construction

Group head
Faema E61

The E61 was introduced in 1961 and has remained the reference point since. A thermosiphon keeps it at temperature continuously, instead of you having to search for it before each shot. You can get seals, shower screens and portafilters for it from specialty dealers, not just the manufacturer.

Temperature control
yes

A PID control continuously measures the temperature and regulates the heater accordingly, instead of simply switching it on and off at a threshold. The difference does not show in the first espresso of the day but in the third in a row: the machine hits the same point again.

Preinfusion
mechanical

Before full pressure the coffee grounds are pre-wetted with low pressure. This is done mechanically through the design of the brew group, without electronics and without adjustments. It prevents channeling in the puck, that is spots where the water breaks through too quickly.

Flow control
optional

With Flow Control you manually control how quickly the water runs through the coffee grounds: start slowly, then increase pressure. That takes the edge off acidic beans and gives you an extra adjustment. Without Flow Control the extraction runs at a fixed pressure, and that is enough for most recipes.

Boiler volume
0.58+1.8 l

Copper conducts heat quickly and evenly, which is why it is the classic boiler material. It reacts more sensitively to hard water than stainless steel; a water filter or soft water significantly extends the time between descalings.

Water connection
water tank, plumbed water connection

The machine can be permanently connected to the water line but does not have to be. When plumbed in you do not need to refill, but the location is fixed and an installer is required. A water filter in the line is then mandatory, not optional.

Pump type
rotary pump

A rotary pump runs significantly quieter and more evenly than a vibration pump and holds the pressure more steady over the entire extraction. It is also the prerequisite for a machine to be connected to the water line.

Cup warmer
yes

The top surface of the machine is warmed by residual heat. A prewarmed cup draws less heat from the espresso, and those last degrees decide whether it still tastes the same in the glass as in the cup.

Standby
yes

The machine switches itself off after a set time or goes into a low-power state. That saves electricity when you turn it on in the morning and then forget about it during the day. Without standby it stays on until you switch it off.

Portafilter diameter
58 mm

58 millimeters is the most common size. Baskets, tampers, levelers and distributors are available for it from many manufacturers, so you are not tied to an unusual size or a single supplier.

Who the Rocket Espresso R58 V3 Cinquantotto is made for

When four milk drinks in a row are normal.

A heat exchanger machine splits one boiler between brewing and steaming. A dual boiler has two boilers, each with its own temperature. You only notice the difference when multiple drinks are made in succession.

  1. 01 Milk drinks without waitingTwo boilers: pull espresso and steam milk at the same time.
  2. 02 For those who seek the temperaturePID control instead of on and off at a threshold. Lighter coffee needs different values than darker coffee, and here you set them.
  3. 03 Tank or plumbed connection2.5 liter tank or fixed connection. Both are provided.

What distinguishes the Rocket Espresso R58 V3 Cinquantotto from the Rocket Espresso R58 V3 Cinquantotto +++B-stock+++?

The Rocket Espresso R58 V3 Cinquantotto as B-stock usually has small, visible signs of use. With the regular version, you receive a brand new device. There is no technical difference. I recommend the regular R58 V3 Cinquantotto if you value a new condition – especially when giving it as a gift or for your own portafilter bar.

Should I buy the Rocket Espresso R58 V3 Cinquantotto or the Quickmill Elevate R with rotary pump espresso machine?

I recommend the Quickmill Elevate R with a rotary pump. The machine operates quietly and stably because it uses this type of pump. This gives you consistent pressure with every espresso preparation. For home baristas who value precision and specialty coffee, this provides you with more control during extraction.

How granular can the brew temperature be adjusted on the PID, is it sufficient for light roasts?

You control the brewing temperature on the R58 V3 via the touch display with precision. For light roasts, I recommend a temperature around 94 °C. The PID control keeps this temperature stable during extraction. By using a longer pre-infusion on the E61 lever, you can extract more aroma from dense light roasts.

What distinguishes the R58 from cheaper entry-level machines?

The R58 has two separate boilers for espresso and steam. You control both temperatures individually via PID control. The heavy E61 brew group maintains a stable temperature. Unlike entry-level machines around €350, you do not switch between steam and brewing here. The processing delivers consistent results for espresso and milk foam.

Can I connect the machine to a fixed water supply or do I have to constantly refill the tank?

You can connect the machine directly to the water line. In a fixed location, you don't have to refill the tank. The water tank holds 2.6 liters.

Which rotary pump does Rocket use in the R58 V3 – and is it suitable for direct water connection without pressure fluctuations?

Rocket specifies a 2.6-liter water tank for the R58 V3. The manufacturer describes a rotary pump, but the metadata field lists a vibration pump. For stable espresso extraction with a fixed water connection, the description recommends the rotary pump. This allows you to achieve consistent brewing pressure without fluctuations – ideal when pulling multiple espressos in succession.

How finely can the PID on the R58 be adjusted, can I go up to 94.5 °C for light Third-Wave roasts?

The R58 has separate PID control for both boilers via the external touch display. You set the brew temperature digitally; the exact control range is not documented in the materials, but typically it is between 88–98 °C for E61 dual boilers. For third-wave roasts with higher temperatures, you should have enough leeway in the upper range. The PID maintains the set temperature precisely, with minimal fluctuations. If you regularly switch between light and dark roasts, you can save profiles directly on the display, eliminating the need for manual adjustments.
