Panela, almond, dried fruit

Panela and caramel on the first sip, followed by almond and dark chocolate, plus a pronounced dried fruit note and a lively, juicy acidity. Sweet, syrupy and fruity at the same time. A coffee with two faces: sweet and full-bodied as an espresso, clean and distinctly fruit-forward in pour-over.

Feldberg comes from Hacienda Cafetera Santa Maria in Aratoca, Santander, in the Colombian Eastern Cordillera near the Chicamocha Canyon. Aratoca is considered one of Colombia's leading communities for organic and shade-grown farming.

Santa Maria is managed by Mildred Daza. The operation is part of the farms that Oscar and Mildred Daza manage together. Oscar Daza was the first producer in the region who financed his organic certification out of his own pocket.

Santa Maria is a women-led coffee project. Besides Mildred as producer there is Alba as cuadrillera, who is responsible for organizing the work on the farm, and Luz as taster and certified Q-Grader, who does the quality control. Mildred's stated goal is to form a cooperative to increase the influence of women in the Colombian coffee sector.

The Daza family transformed an area that was originally dry and unsuitable for coffee growing into a plantation with a three-layer agroforestry system more than 25 years ago. Over 15 different tree species shade the coffee plants, which slows the ripening of the cherries and provides habitat for birds and other species.

The coffee reaches us via our green coffee importer Belco, traceable to the lot and to the farm.

Cup 150 to 180 ml, 1 to 2 cm foam. Start with cold milk in the jug and do not froth above 70 °C, otherwise the sweetness is lost. For oat drink: use the barista version, the regular one curdles when frothing.

What does Omniroast mean?

Feldberg is intentionally roasted between a filter roast and an espresso roast: light enough that fruit and acidity are preserved, dark enough that body and crema develop. This does not work with every green coffee. It works here because the half-washed processing inherently brings a lot of sweetness and a syrupy texture that carries the fruit.

Where does the fruit come from?

Half-washed means: part of the sweet mucilage remains on the bean during drying. The result sits between washed and natural, more sweetness, texture and fruit than washed coffees, more clarity than naturals. Added to that are 1,600 meters of altitude and three-layer shade cultivation, which lets the cherries ripen more slowly. That is exactly what produces the lively acidity and the dried fruit note.

Feldberg or Hochlandsonne?

Both come from Colombia and both cross the Atlantic under sail. The difference lies in the coffee: Feldberg is half-washed, sweet, caramel and dried fruit, from a single finca with a named producer. Hochlandsonne is washed, floral and clean, from a cooperative in Cauca. Feldberg is the warmer of the two, Hochlandsonne the brighter.

How fresh is the coffee when it arrives?

We roast in Vöhringen and only fill your bag immediately before shipping. Until then the roast batch is stored sealed in bulk packaging. The roast date is printed on every package. After 10 to 14 days of resting the sweetness and body are just right, after that the coffee remains aromatic for about four months.

Whole bean or ground?

Both. In addition to whole bean we grind on request for portafilter (fine), drip coffee maker, moka pot or French Press (coarse). Freshly ground tastes best, ground coffee loses aroma faster.

What package sizes are available?

250 g and 500 g, most varieties also as 1 kg. The larger the package, the cheaper the price per kilo. We display the price per kilo directly at the size selection.

Is the coffee really organic?

Yes. All our coffees are EU organic certified, Naturgold and Naturharmonie are additionally Demeter certified. The responsible organic control body is shown on each product page in the bean profile, together with the note non-EU agriculture.
